This 10,000 sq. ft. project redefines the food and beverage spaces within the hotel, creating environments that are not only functional but also inviting and vibrant. By focusing on the theme of “convivial connectivity,” the design encourages social interaction and communal experiences among guests.
Reimagining Space for Social Interactions
The foundation of this renovation rests on the idea of “social ergonomics,” a principle that prioritizes the comfort and interactions of guests. Atelier Zébulon Perron began by transforming the existing breakfast area into a multifunctional space that serves various purposes throughout the day. The firm emphasized the importance of space layout in facilitating movement and gatherings, ultimately creating a seamless environment for guests.
A significant design choice was the reopening of an existing skylight, which had previously been sealed off. This decision not only flooded the area with natural light but also introduced a striking element: a large tree planted directly beneath the skylight. This tree acts as a focal point, drawing the eye and symbolizing a connection to nature within the urban setting. The combination of soft colors, high-quality materials like walnut and white oak, and thoughtful design elements contributes to an overall atmosphere of comfort and intimacy.
Transitioning with Purpose

The breakfast service area is cleverly positioned between two monolithic structures, effectively removing it from the visual focal point of the main room. Adjacent to the breakfast area, a new VIP lounge has been created, offering a more private experience for preferred guests. Designed with a glazed glass partition, this space remains light-filled yet offers a sense of seclusion. Celebrating Local Culture with a Contemporary Twist
The dining experience at Bivouac, the hotel’s newly designed restaurant, pays homage to Quebec’s culinary heritage while embracing modern design elements. Drawing inspiration from the concept of “glamping,” Bivouac incorporates references to the Canadian wilderness without being overly literal.
